Thelma Wiggins's Chocolate Pie
Ingredients
- 3/4 cup sugar
- 1/3 cup flour
- 1/4 teaspoon salt
- 2 cups milk, divided
- 2 eggs
- 1 Tablespoon butter
- 1 cup semisweet chocolate chips
- 1 teaspoon vanilla
Directions
In a medium saucepan, stir together thesugar, flour, and salt, then whisk in 1 cup of milk until smooth. Put over medium-low heat, stirring frequently, until very thick. Remove from the heat. Beat together the eggs and remaining 1 cup of milk. Gradually add to the hot mixture, stirring quickly to prevent the eggs from scrambling. Return to the heat, stirring constantly, until very thick. Remove from the heat and add in the butter, vanilla, and chocolate chips. Stir until the the butter and chocolate are melted and mixed through. Pour into a baked pie crust and refrigerate.
